Jennie Pinnock's Easy Apple Pie

  Easy Apple Pie Pastry: 1 1/2 cups flour 8 tablespoons butter, cold 1/4 teaspoon salt 7 to 8 tablespoons ice water Combine for filling: 5 to 8 peeled, cored and sliced apples 1/4 cup sugar 1 teaspoon cinnamon 1/4 cup lemon juice 3 tablespoons butter, cut into small pieces Powdered sugar          Work flour, butter and salt together with fingers until well blended. Butter should be chunky. Add water and work into dough. Gather into a ball, cover and chill for at least 30 minutes. On a floured surface, roll out pastry into a large circle. Pastry should be approximately 1/4" thick. Transfer dough to a cookie sheet. Cover the center of the pastry with the apple filling. Fold up edges of pastry over the apples (pastry won't cover the apples entirely). Glaze the pastry with beaten egg yolk if desired. Bake for 45 to 60 minutes at 400 degrees, until golden. Strawberry slushies

Strawberry slushies Ingredients 2 pints of strawberries 3 teaspoons sugar ½ lemon 10-12 ice cubes 1. Wash the strawberries & cut them into pieces. Put them in a blender with the juice of half a lemon & the sugar. 2. Blend the ice into the strawberry mixture until the desired consistency is achieved. Serve & enjoy. 

Aebleskivers

  Aebleskivers Ingredients 2 cups flour 2 teaspoons melted butter 2 cups buttermilk 3 eggs separated 2 teaspoon sugar 1 teaspoon baking soda 1 teaspoon baking powder 1 teaspoon salt  MUST HAVE AN AEBLESKIVER PAN 1. In a medium bowl beat the egg whites to stiff peaks form, set aside. 2. In a large bowl beat yolks and sugar until well blended. 3. Add all remaining ingredients except whites and beat until smooth. 4. Fold in whites until well blended. 5. Heat your greased aebleskivers pan over medium heat. (It is ready when drops of water sizzle.) 6. Fill each cup with about 1 tablespoon of batter. 7. Cook for 2 to 3 minutes on one side,  then  flip & cook for 2 to 3 minutes on the other. 8. Both sides should be golden brown & a toothpick inserted into the middle comes out clean. 9. Serve with toppings if you like & enjoy.

Lemonade

                                                                                           Lemonade Ingredients   6 ½ cups water 1 cup lemon  juice 1 cup sugar Ice cubes Combine  ingredients in blender. Blend. Add ice cubes and blend again. makes 2 quarts

Chocolate chip cookies

  Chocolate chip cookies Ingredients ½ cup butter, softened ⅓ cup brown sugar ⅓ cup sugar, granulated 1 egg ½ teaspoon vanilla 1-¼ cup flour ½ teaspoon salt ½ teaspoon baking soda 1 cup chocolate chips 1. Beat together the butter & sugars. Add the egg & vanilla. In a separate bowl, combine flour, salt, & baking soda. Stir flour mixture into egg mixture. Add chocolate chips. 2. Make a log out of the dough & wrap it in parchment paper. Leave in the fridge for at least two hours. 3. Preheat the oven to 375℉. Cut the log into half-inch slices & put them on an ungreased baking sheet. Leave a little space between the cookies. 4. Cook them at 375℉ for 8-10 minutes.

Reese's cookies

  Reese's  cookies                                     Ingredients 1 cup butter, softened ¾ cup sugar ¾ cup brown sugar        2 eggs 1teaspoon vanilla 1 teaspoon baking soda 1 teaspoon salt 2 ¼ cups flour 1 ½ cup mini Reeses®  Cream butter & sugars. Add eggs & vanilla, mix well, then add dry  ingredients & mix just until combined. Cut Reeses® into fourths & mix in. Scoop into balls & bake on an ungreased cookie sheet for 9 to 11 minutes at 375 degrees.
