Easy Apple Pie


Pastry:

1 1/2 cups flour

8 tablespoons butter, cold

1/4 teaspoon salt

7 to 8 tablespoons ice water


Combine for filling:

5 to 8 peeled, cored and sliced apples

1/4 cup sugar

1 teaspoon cinnamon

1/4 cup lemon juice

3 tablespoons butter, cut into small pieces

Powdered sugar

    

    Work flour, butter and salt together with fingers until well blended. Butter should be chunky. Add water and work into dough. Gather into a ball, cover and chill for at least 30 minutes. On a floured surface, roll out pastry into a large circle. Pastry should be approximately 1/4" thick. Transfer dough to a cookie sheet. Cover the center of the pastry with the apple filling. Fold up edges of pastry over the apples (pastry won't cover the apples entirely). Glaze the pastry with beaten egg yolk if desired. Bake for 45 to 60 minutes at 400 degrees, until golden. Cool slightly and dust with powdered sugar.
